Here’s a delicious way to incorporate healthy, whole grains into your next meal. A traditional Middle Eastern and Central Asian dish, pilaf consists of grain that soaks in flavor from being simmered in a seasoned broth. This pilaf consists of barley, which can be found in the market in a variety of forms. As called for in this recipe, hulled barley has superior nutritional content compared to other forms because only the hull of the grain is removed, leaving the bran intact. Serve this Barley Pilaf hot off the stove as a tasty side dish for dinner, or chilled for a great lunch salad.
3 cups vegetable stock
1 cup barley, hulled or pot
3 scallions, chopped
1 celery stalk, chopped
1/2 pound mushrooms, sliced
1/2 tsp. salt
1/4 tsp. pepper

Researchers
recently revealed that diets rich in whole grains can
lower the risk of diabetes and heart disease. The study
examined diet records of nearly 1,000 healthy middle-aged
adults and measured levels of insulin. A higher intake
of whole grains was associated with greater levels of
physical activity, more fruit and vegetable intake,
and lower consumption of fats.
Diets shown to lower the risk of diabetes and heart disease include an assortment of healthy, plant-based foods such as bran, whole wheat, fruit and vegetables. Whole grains provide a rich source of fiber, essential minerals, vitamins and antioxidants.

Last spring,
Ben Davidow made a commitment to change his way of life
after watching a 12-minute video on the Internet.
The life-altering video provided him with a
glance into the cruelty of modern animal agribusiness
and prompted him to become vegan, embracing a plant-based
diet.
Soon after, the 18-year-old high school senior decided to get active for the animals by involving himself in campaigns pushing for better treatment of farmed animals. He has given a series of talks to his fellow students about factory farms, submitted a proposal for a course about animal issues, and continues to speak out by writing articles and sharing his views.
Ben is very optimistic and will continue to educate others with every opportunity. He states, "In the coming decade, we'll see a major revolution in how people relate to animals and the disconnect Americans have with where their food comes from."
